Grilled Garlic Rosemary Trout with pan fried redskins and roaste

Ingredients:

  • 1- unshucked piece of corn (soak corn in water for 30 min , grill for 20-25 min on med/high heat)
  • 1 tsp - salt
  • 1 tsp - pepper
  • 1 tsp - rosemary
  • 2 tsp - oil
  • 8 oz. - trout (cook 3-5 min per side on med/high heat on preheated grill)

Directions:

prep for redskins- cook in microwave for 3 min then let rest for 5 minutes. quarter the potatoes and place in a small bowl. put 1 Tbl butter in a small skillet melt butter on med/high then add potatoes and season with 1 tsp salt 1 tsp pepper 1 teaspoon crushed rosemary
