Cleaning and Filleting Instructions

Preparing your Rainbow Trout is easy.  First, remove the trout's tail and head.  Cut the underside of the trout and remove the guts.  Rinse your fish with cold water.  Make sure the fish is belly side up and fillet your fish by cutting upward along the backbone, the knife will naturally follow the outside of the ribs of the fish.  Repeat on the other side. Afterwards, remove the remaining row of bones found in the center of the fillets.

Cooking Instructions

Bring Skillet up to med/high heat
Medium sized fillet

  • Place fillet presentation side down first
  • Sautéed with:
    • lemon pepper
    • salt pepper
    • olive oil
    • fresh garlic
  • Cook over med/high heat for 2 minutes
  • Turn and cook additional 3 minutes covered

Side dishes

  • Boil potato slice and brown in a pan of garlic salt and rosemary
  • Sautéed zucchini and squash cook til tender

Cooking Instructions

Preheat oven to 350 degrees
Cooking time depends on the thickness of salmon

  • Marinade for salmon
    • place in a plastic bag
    • add 1/4 cup of soy
    • also add 2 teaspons of fresh ginger
    • marinade salmon for 2 to 4 hrs
  • Place fillet in oven for 10 to 14 minutes, depending on thickness

Side dishes

  • Steam broccoli to desired tenderness
  • Steam or bake potato to desired tenderness
