Pan fried Coconut Crusted Perch with baked sweet potato and saut

Ingredients:

  • 2 - eggs whisked
  • 1/3 c. - milk
  • 1/3 c. - coconut
  • 1/3 c. - panko bread crums
  • 1 - zucchini halved
  • 1 - squash halved
  • 1 - sweet potato (oil sprinkle garlic salt wrap and cook at 400 deg. for 1 hour)
  • 8 oz. - perch

Directions:

*put 1 Tbl oil in a small skillet heat at med/high and cook zucchini/ squash medly covered for 4 min. (toss it a couple times in between so it doesn't burn one side. *mix coconut and panko together *dip fish into egg wash then coconut panko mixture and put in preheated oiled skillet , cook for 3-4 minutes on each side on med/high
