Marinated King Salmon, with sautéed summer vegetables

Ingredients:

  • Marinade - 2T olive oil, 1T soy sauce, 1 T rice vinegar, 1/2 tsp garlic salt, 1/2 tsp pepper, 1/2 tsp salt, 1/4 tsp chili powder, 2 chopped basil leaves
  • Mango Salsa -1/4 C. diced red onion, 1 C. Diced mango 1/4 C. Diced red pepper, 1 T rice vinegar, 4 diced mint leaves 1 diced basil leaf 1/4 juiced lemon.
  • Sautéed Veggies - 1/4 cup rough chopped sweet onion, 1/4 cup chopped red pepper, 1/2 cup rough chopped mushrooms. 2 rough chopped zucchini.
  • Salmon - Salmon

Directions:

Marinade - Combine and stir, then put salmon and marinade in a ziploc bag for 15-30min. Mango Salsa - Combine in a bowl and let set in the fridge for 1 hour. Sautéed Veggies - In a medium sauce pan, combine 2 T olive oil and veggies, cook on high stirring frequently for 4-6 min. Salmon - Preheat and clean grill on high heat, place salmon skin side up and the close the lid and lower the heat to med/high and cook for approximately 4 min on each side (depending on the thickness of the filet).
